How to Melt Chocolate

Knowing how to melt chocolate properly is essential for the preparing of THE best ingredient to any sweet creation. Not done properly it can seize through overcooking.

Steps

1- Break up chocolate. Break the chocolate into small pieces and add to a heatproof bowl (this could be glass or ceramic, just not plastic!).

2- Boil water. Add a little boiling water to a well sized saucepan (in that the bowl rests nicely over the top of it without sitting too deeply) and heat until simmering.

3- Sit bowl over saucepan. Suspend the bowl over the simmering water but do not allow the base of the bowl to touch the water. 

4- Heat the chocolate. Heat the chocolate, stirring regularly, until almost completely melted, then remove from the heat; the residual heat of the bowl will melt any remaining lumps.


Tips

Melt the chocolate just before you intend to use it, as it’s difficult to re-melt it successfully.
